Maine Lobster Recipe
1 gallon water
Pinch sea salt
1 bunch fresh parsley
4 bay leaves
1/4 cup whole black peppercorns
4 (1 1/2 pound) whole lobsters or equivalent amount of lobster tails
1 pound melted butter
1. Add salt, parsley, bay leaves, and peppercorns to boiling water in a big saucepan with a cover.
2. Place the lobsters in the boiling water, making that the rubber bands on the claws are still attached. Cover and cook for about 15 minutes before transferring to a tray.
3. To shell the lobster, gently twist the tail from the body. Remove the claws and remove the lobster flesh with a lobster cracker or nut cracker onto a serving dish.
4. Dip the lobster chunks in the melted butter in proper sized dishes and enjoy!
Note: You can save the stock from the saucepan for future use (in soups or other recipes).
Strain, chill, and freeze in 1/2 or 1 cup increments in labelled containers or plastic bags.
